Preserve Fresh Garlic Juice
Preparing fresh garlic juice takes time and you do not want to repeat the process every time you need the juice. Make a large batch, then take steps to preserve your fresh garlic juice for extended storage so your garlic juice will be ready when you need it. This works for both roasted and freshly made garlic juice. By having your garlic juice preserved in single tablespoon servings, measuring the juice for recipes becomes easier. Instructions
1. Puree the garlic cloves in a food processor. Push the garlic puree through a wire colander lined with cheesecloth into a bowl to separate the solids and make one cup of fresh garlic juice.
2. Evenly divide the garlic juice into the wells of an ice cube tray, filling each well with one tbsp. of garlic juice.
3. Freeze the garlic juice for three to four hours or until solid.
4. Transfer the garlic juice ice cubes into a plastic freezer bag.
5. Seal the bag, and return it to the freezer until ready to use.
